Cloves are a great source of essential nutrients like vitamin K, minerals like manganese and potassium, and dietary fibre. It possesses antiseptic, antibacterial, and antifungal properties that guard against infections from a variety of organisms.

- Size : 1.5–2 (5⁄8–3⁄4 in) long.
- Colour : Cloves are reddish-brown to brown in colour, with a light brown head.
- Foreign material : Maximum 2%
- Texture : Cloves should be whole, unbroken, and oil rich, without being brittle or woody.
- Moisture : less than 12%.
- Stems : content - 3–5%.
- Essential oil : High quality cloves contain 15–20% essential oil. The aromatic compound eugenol, which makes up over 85% of the essential oil, is what gives cloves their characteristic flavour.
- Storage : Cloves should be stored in a cool, dry place between 65–75°F with 60–65% humidity. They should not be stored near substances that Produce Adoors.
- Cloves are intensely flavoured and can cause a numbing sensation in the mouth. They also have antibacterial properties that can help with dental issues like toothaches, gum disease, and bad breath.
