Tapioca Starch

Tapioca is a starch extracted from cassava root. It consists of almost pure carbs and contains very little protein, fiber, or other nutrients. Tapioca has recently become popular as a gluten-free alternative to wheat and other grains.

  • Starch Content : At least 85% by weight
  • Moisture : At most 14% by weight
  • Ash Content : At most 0.20% by weight
  • pH : 5.0–7.0
  • SO2 : At most 10 ppm
  • HCN : Less than 10 ppm
  • Fiber Content : At most 0.2 cc per 50 g of starch content
  • Sieve Test :At least 95% pass through 150 mesh
  • Gelatinization Temperature :62 and 65°C
