Curry Powder
Curry powder is a complex mixture of spices and herbs blended to help cooks create dishes known as curries. The word “curry” can be confusing because curry is both a type of meal and a category of spice blend. A curry dish is an intensely seasoned union of vegetables and, often, protein simmered in a thick gravy.
Specification of Curry Powder
- Moisture : Should not exceed 14% by weight
- Volatile oil: Should be at least 0.25% (v/w) on a dry basis
- Non-volatile ether extract : Should be at least 7.5% by weight on a dry basis
- Edible common Salt : Should not exceed 5% by weight on a dry basis
- Ash insoluble in dil.HCL : Should not exceed 2% by weight on a dry basis
- Crude fiber : Should not exceed 15% by weight on a dry basis
- Admixture : Should not exceed 1%
- Shape : Should be a powder with a mesh size of 60–80
- Spice and condiment content : Should be at least 85%
- Fineness : Should be fine enough to pass through a 300 micron sieve
- Taste and odor : Should be fresh, pleasant, and characteristic of the product
- Free From : Should be free from dirt, fungal growth, insect infestation, added coloring, flavoring substances, and preservatives other than salt
